“Eat Your Greens” Simple Sausage Soup
1 onion, chopped
2 cloves garlic, minced
1-2 Tbs cooking fat
¾-1 lb. sausage of choice (bulk if you have it; remove from casings if not)
Sea salt and pepper
4-5 carrots, chopped
Optional: Empty your veggie drawer and add the goodies that are on their last legs
12-16 oz mixed greens, chopped (or use ¾-1 bag Trader Joe’s “Southern Mixed Greens”)
6-8 cps homemade bone broth or stock (or sub. Trader Joe’s bone broth)
Optional: 2 large sweet potatoes, peeled, chopped and steamed
Saute onion and garlic in fat.
Add sausage and break into bite-sized pieces. Add carrots.
Cook until meat is almost done. Salt and pepper. Toss in the greens, stirring until coated with the fat and slightly wilted.
Pour in the broth to the level you desire. Simmer until greens are crisp-tender.
Adjust seasoning and serve with sweet potatoes, if desired.
